Too many people -- 47 million at latest count -- lack health insurance; far too many do not have a regular source of care and use costly emergency rooms for routine care; per-person health-care costs are as much as 250% higher in the U.S. than in any other developed nation; and the quality of care, even for those who are insured, is -- in the words of one recent expert report -- "mediocre at best."&lt;br /&gt;&lt;br /&gt;In that context, President Bush is to be commended for making health insurance coverage a top priority for his Administration, and for calling on Congress to address the matter. The President has already demonstrated that he's willing to invest taxpayer dollars in health programs that generate results. Since taking office, he's prodded Congress to expand funding for Community Health Centers, resulting in 5 million more Americans gaining access to affordable primary health-care services.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Dubious Tax Breaks&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;In his State of the Union address, Bush outlined a roadmap that involves tax deductions for insured individuals and families, designed in part to give the uninsured an incentive to purchase coverage. But it doesn't necessarily chart the right course, and it contains a few too many detours. In other words, you can't get there from here.Changes in our current system of health care must simultaneously deal with three important elements: cost, quality, and access. Even if we follow through with the President's proposal to change the financing of health care for millions of people, there is little promise for progress on either cost or quality. More worrisome still is that the Administration proposal could unintentionally trigger a serious erosion of current coverage without making health insurance more affordable to those who need it most.&lt;br /&gt;&lt;br /&gt;This is because the tax changes proposed could lead both those who presently have adequate coverage and those who may seek coverage to pursue insurance policies that fall within the limits of the proposed tax benefit; the maximum allowable premium is relatively low. Unfortunately, most policies available today in this less expensive category fail to cover crucial preventive and primary health-care services -- the most cost-effective of all health-care services, because they lower the need for specialty care, reduce hospital admissions, and provide a vital, less costly alternative to emergency rooms.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Inadequate Primary Care&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;More than 6 million of the 16 million patients receiving care at health centers today are completely uninsured. Health centers tell us that they are seeing a new wave of people who are underinsured: those whose health insurance provides little or no coverage for the preventive and primary care the centers offer.&lt;br /&gt;&lt;br /&gt;Underinsured people often have policies that include very high deductibles -- from more than $1,000 to as high as $5,000 per family member. Such plans leave all of their primary health care uncovered, beyond their meager ability to pay for out-of-pocket expenses.The waiting room of Lake Superior Community Health Center in northeast Wisconsin offers an on-the-ground perspective on America's ailing health-care system. More than 60% of the health center's patients have incomes at or below the poverty level, and almost three-quarters are uninsured. The demand for affordable primary health-care services is so high that the wait time to see a doctor can stretch to as long as three months.&lt;br /&gt;&lt;br /&gt;The tax policies proposed in the President's plan would have, at best, exceedingly limited impact in this rural pocket of America, and would do nothing to shorten the wait to see a doctor. Indeed, the scarcity of affordable primary health-care services is the other half of the health-care debate missing from the halls of leadership. Some 35 million Americans have no access to basic services, even though many of them do have insurance. Coverage without an available provider is as worthless as currency without a marketplace.&lt;br /&gt;&lt;br /&gt;Sabotaging the Safety NetPerhaps the biggest flaw in the President's proposal is that it wagers a risky bid for giving broader flexibility to the states on the backs of safety net providers. The proposal, which likely won't pass muster with Congress, redirects funding that currently flows to safety net providers -- the hospitals that see high volumes of Medicaid and uninsured patients -- to instead fund his new insurance coverage initiatives.&lt;br /&gt;&lt;br /&gt;Yet, no matter how successful these initiatives may be, there will continue to be millions of uninsured Americans who will need ongoing care from providers committed to serving them. They want you to eat properly so you’ll develop, be healthy, and keep your moods balanced.&lt;br /&gt;Your body needs certain nutrients to feel well as you go through each day. The most important meal is breakfast, even though it’s probably the most difficult for many teenagers. If you are interested in following more of a vegetarian diet, choose soy products, beans, and nuts to satisfy your protein needs.&lt;br /&gt;&lt;br /&gt;Carbohydrates are our main source of energy and play an important role in the functioning of our nervous system, muscles, and internal organs. Carbohydrate foods include fruits, vegetables, whole grains, and beans. The foods you should eat in limited amounts are ones that contain sugar, such as packaged cookies, cakes, soda-these sugars are called simple carbohydrates; they have a negative effect on your blood sugar levels and your moods as well.&lt;br /&gt;Fats are a form of energy reserve and insulation in your body, and can be burned to make energy when you don’t get enough from your diet. Fats transport nutrients such as vitamins A, D, E, and K through your body and fatty tissue protects your vital organs from trauma and temperature change.&lt;br /&gt;&lt;br /&gt;Simply put, there are “good” fats and “bad” fats. The “bad” fats are called saturated fats and are found in animal products, meats, and dairy foods; they should be eaten in limited amounts. These fats solidify at room temperature. Hydrogenated fats, sometimes called “transfatty acids” are also bad fats that are known to lead to heart disease and cancer. These hydrogenated fats are used in many packaged baked goods and margarines.&lt;br /&gt;&lt;br /&gt;The “good” fats include the Omega-3 and Omega-6 fatty acids. Deficiencies of Omega-3 fatty acids are linked to decreased learning ability, ADHD, depression, and dyslexia. These fats need to be obtained from your food. Good sources of the Omega-3’s are flax oil, ground flaxseed, cold water fish like salmon and fresh tuna, canola oil, walnuts, and pumpkin seeds. Other “good” fats to include in your diet are found in olive oil, avocados, and grapeseed oil.&lt;br /&gt;&lt;br /&gt;Here are some ideas for healthy, quick and easy meals:&lt;br /&gt;&lt;br /&gt;Breakfast&lt;br /&gt;&lt;br /&gt;Soy shake-combine a cup of vanilla, chocolate, or plain soymilk (or use cow’s milk if you prefer) in a blender with ½ banana, 2 ice cubes and blend. Add 1 scoop of soy or whey protein powder-Spirutein is one brand of soy protein powder that comes in a variety of flavors. (Optional: add 1 tablespoon of ground flaxseed). If you start your day off by drinking this shake, you should notice an improvement in how you feel and function throughout the day.&lt;br /&gt;&lt;br /&gt;Whole grain toast or bagel with peanut butter-the peanut butter should give you the protein you need to sustain your energy throughout the morning. c. Eggs-fried, scrambled, poached, or hard-boiled with whole grain toast; 1 or 2 eggs will provide you with a great protein source to begin your day and the whole grain toast gives you the carbohydrates for energy.&lt;br /&gt;&lt;br /&gt;Oatmeal with chopped nuts and raisins, a sliced banana, or strawberries. For extra protein, add a scoop of peanut butter to the oatmeal.&lt;br /&gt;&lt;br /&gt;Calcium fortified orange juice-drink this before your breakfast or along with it to get the added calcium and vitamin C.&lt;br /&gt;&lt;br /&gt;Fresh fruit-it’s great to start your day with fresh fruit whenever possible-an orange, pear, strawberries, banana, watermelon, peaches, blueberries-combine your favorite fruit with a container of yogurt and add some granola for a delicious breakfast.&lt;br /&gt;&lt;br /&gt;Lunch&lt;br /&gt;&lt;br /&gt;Egg salad sandwich on whole wheat bread with lettuce and tomato&lt;br /&gt;&lt;br /&gt;Veggie burger with all of the toppings that you would add to a regular hamburger&lt;br /&gt;&lt;br /&gt;Tuna salad sandwich on whole grain bread or roll&lt;br /&gt;&lt;br /&gt;Salad bar with a colorful variety of vegetables and chick peas or red kidney beans&lt;br /&gt;&lt;br /&gt;Wrap with turkey, chicken, tofu, or cheese and vegetables&lt;br /&gt;&lt;br /&gt;Vegetarian chili with tortilla chips&lt;br /&gt;&lt;br /&gt;Tacos with lettuce, tomato, onions, and cheese&lt;br /&gt;&lt;br /&gt;Black bean soup, lentil soup, vegetable soup&lt;br /&gt;&lt;br /&gt;Veggie pizza or pizza with any of your favorite toppings&lt;br /&gt;&lt;br /&gt;Dinner&lt;br /&gt;&lt;br /&gt;Pasta with pesto sauce, tomato sauce, or with vegetables&lt;br /&gt;&lt;br /&gt;Stir fry vegetables with tofu, shrimp, or chicken&lt;br /&gt;&lt;br /&gt;Caesar salad with grilled shrimp or chicken&lt;br /&gt;&lt;br /&gt;Broiled salmon with vegetables&lt;br /&gt;&lt;br /&gt;Baked potato with vegetable topping or chili topping&lt;br /&gt;&lt;br /&gt;Ravioli with meatballs and sauce&lt;br /&gt;&lt;br /&gt;Chicken fajitas with guacamole and salsa&lt;br /&gt;&lt;br /&gt;Your dinner choices are unlimited, and will depend on whether you or your parents are preparing your meal. Your goal in the beginning should be to eat a good breakfast and at least one other healthy meal each day. That meal should contain a good source of protein, fresh vegetables, and whole grains (e.g. brown rice, barley, millet, whole wheat, oats).&lt;br /&gt;&lt;br /&gt;Make an effort to eat foods that don’t come prepackaged or prepared. Read the nutrition labels on the packaged foods you do eat so you can learn more about the food’s sodium and fat content, as well as the many ingredients that are contained in the packaged foods. If you can’t pronounce the ingredients on the label, chances are the food is not your best choice nutritionally.&lt;br /&gt;Along with choosing and eating more healthy foods, begin to exercise each day for at least 10 to 15 minutes, unless you already have a physically active lifestyle. Before school, jump rope for a few minutes before leaving the house to get your blood moving, you’ll feel better and it will improve your ability to concentrate during the day. After school, jump and dance on an exercise trampoline while listening to music. This is a great way to get the blood circulating to your brain so you can better focus on your homework assignments. (You can purchase an exercise trampoline for about $20 at a large discount department store.)&lt;br /&gt;&lt;br /&gt;Whatever physical activity appeals to you, make it part of your daily routine. It will lift your spirits and improve your moods. Combine the exercise with healthy, fresh foods and you’ll be surprised at how much better and more energetic you’ll feel. American's are not eating enough vegetable and fruits. evidence is mounting that the healthiest diets are loaded with plant foods (vegetables, fruits and beans) and short on animal foods (meat, fish, poultry and dairy products), especially those with a high fat content.&lt;br /&gt;&lt;br /&gt;"A diet rich in fruits and vegetables plays a role in reducing the risk of all the major causes of illness and death," says Walter Willet, Head of the Nutrition Department at the Harvard School of Public Health.&lt;br /&gt;&lt;br /&gt;To many people, vegetarian is a loaded word. It typically refers to people who never eat meat, fish or poultry for ethical, religious or health reasons. Vegans also avoid all dairy products and eggs. But scientists are more interested in how often - not whether - people eat animal foods. And much of their research points to the same conclusion: people should eat fewer animal foods and more plant foods, especially fruits and vegetables. Why? Here are 10 reasons - some related to health, some not.&lt;br /&gt;&lt;br /&gt;1. Cancer&lt;br /&gt;&lt;br /&gt;"The scientific base is very strong suggesting that fruits and vegetables are protective elements for all gastrointestinal cancers and all smoking-related cancers," says Tim Byers, professor of Preventive Medicine at the University of Colorado Health Sciences Center in Denver. That includes cancers of the lung, colon, stomach, mouth, larynx, esophagus and bladder. And a recent study found that lycopene - a carotenoid in tomatoes and tomato sauce - may protect against prostate cancer. It's not clear how fruits and vegetables may reduce cancer risk. It could be their phytochemicals - things like carotenoids, vitamins C and E, selenium, indoles, flavonoids, phenols and limonene. There is also evidence that high-fibre grains like wheat bran can reduce cancer risk. "Fibre has a beneficial effect in preventing colon cancer," says David Jenkins, a fibre expert at the University of Toronto. And pasta, rice and other grains can replace the animal foods - red meat, in particular - that may increase the risks of some cancers. "Men who eat red meat as a main dish five or more times a week have four times the risk of colon cancer of men who eat red meats less than once a month," says Edward Giovannucci of Harvard Medical School. Heavy red-meat eaters were also twice as likely to get prostate cancer in his study of 50,000 male health professionals. That's just one study. Looking at others, says Lawrence Kushi of the University of Minnesota, "the evidence is quite consistent that red meat is associated with a higher risk of colon - possibly prostate - cancer". But even lean red meat seems to increase the risk of colon cancer. "It could be the carcinogens created when meat is cooked or meat's highly available iron, or something else in meat," speculates Willett.&lt;br /&gt;&lt;br /&gt;2.Heart disease&lt;br /&gt;&lt;br /&gt;A plant-based diet with lots of fruits and vegetables can reduce the risk of heart disease. For the last 20 years, heart experts have emphasised cutting saturated fat and cholesterol intake, but plants may protect the heart in other ways. Among them: * Soluble Fibre: "To reduce your risk of heart disease, you may want to eat more beans, peas, oats, and barley," says Jenkins, because their "sticky" soluble fibre seems to help lower blood cholesterol. * Folic Acid: "The evidence that folic acid reduces the risk of heart disease is pretty strong," says Willet. Folic acid, a B-vitamin, lowers blood levels of a harmful amino acid called homocysteine. "And fruits and vegetables are a major source of folic acid," he adds.* Antioxidants: a growing body of evidence suggests that LDL ("bad") cholesterol damages arteries only when it has been oxidised (combined with oxygen). That's why researchers believe that antioxidants like vitamin E may protect the heart. And many of the phytochemicals in fruits and vegetables are antioxidants. * Squeezing Out Saturates: if you eat lots of plant foods, there's simply less room for the saturated animal fats that clog arteries.&lt;br /&gt;&lt;br /&gt;3. Stroke&lt;br /&gt;&lt;br /&gt;There's a lot of evidence showing that fruits and vegetables are beneficial for reducing the risk of stroke," says Willet. For example, in a 20-year study of 832 middle-aged men, the risk of stroke was 22 per cent lower for every three servings of fruits and vegetables the men ate each day. Again, no one's sure if it's the potassium, magnesium, fibre or other components of fruits and vegetables that prevent arteries from clogging in the brain.&lt;br /&gt;&lt;br /&gt;4. Diverticulosis &amp;amp; Constipation&lt;br /&gt;&lt;br /&gt;High-fibre grains - especially wheat bran - can help prevent constipation. That's not trivial in a country like the US that spends millions a year on laxatives. Diverticulosis is also common. About 30 to 40 per cent of people over 50 have it, though most have no symptoms. Others experience bleeding, constipation, diarrhea, flatulence, pain, or diverticulitis (that's when the pouches - or diverticula - that form in the walls of the colon get inflamed). "In our studies, it's clear that fibre both from bran and from fruits and vegetables is protective," says Willet. Men who ate the least fibre (13 grams or less a day) were almost twice as likely to get diverticulosis as men who ate the most fibre (at least 32 grams of fibre a day).&lt;br /&gt;&lt;br /&gt;5. Other diseases&lt;br /&gt;&lt;br /&gt;Plant-rich diets may prevent other illnesses:* Macular Degeneration: a carotenoid called lutein - which is found mostly in leafy greens - may help prevent the deterioration of the retina that causes blindness in older people. "In our study, people who ate spinach or collard greens two to four times a week had half the estimated risk of macular degeneration compared with those who ate them less than once a month," says Johanna Seddon of Harvard Medical School. * Neural Tube Defects: folic acid supplements can reduce the risk of spina bifida and other neural tube birth defects. Folic acid from foods (mostly fruits and vegetables) may also cut the risk. * Diabetes: "We found a lower risk of adult-onset diabetes in people who ate more whole grains," says Willet.&lt;br /&gt;&lt;br /&gt;6. Safer food&lt;br /&gt;&lt;br /&gt;Some of the deadliest food-borne illnesses enter the body via animal foods. "Ground beef is the most likely source of E. Coli 0157:H7. Poultry carry Salmonella and Campylobacter, and the consumption of raw shellfish has caused infection with Vibrio vulnificus," says David Swerdlow of the Centers for Disease Control in Atlanta. Any raw food - including fruits or vegetables - can carry harmful bacteria. "For example, recent outbreaks of Salmonella have been associated with cantaloupe, tomatoes and alfalfa sprouts," says Swerdlow. But meat, seafood and poultry are the most likely culprits in food-borne illness.&lt;br /&gt;&lt;br /&gt;7. The environment&lt;br /&gt;&lt;br /&gt;"Our eating habits have a tremendous effect on the planet," says Jenkins. "Eating animals wouldn't harm the environment if it were done on a much smaller scale," explains Alan Durning, Director of North-west Environment Watch in Seattle. "Modern meat production involves intensive use - and often misuse - of grain, water, energy and grazing areas," says Durning. He cites the following examples: * Water pollution: the manure and sewage from stockyards, chicken factories, and other feeding facilities can pollute water supplies. * Air pollution: thirty million tons of methane - a gas that contributes to global warning - comes from manure in sewage ponds or heaps. * Soil erosion: nearly 40 per cent of the world's - and more than 70 per cent of US - grain production is fed to livestock. For each pound of meat, poultry, eggs and milk we produce, farm fields lose about five pounds of topsoil. * Water depletion: an estimated half of the grain and hay that's fed to beef cattle is grown on irrigated land. It takes about 390 gallons of water to produce a pound of beef.&lt;br /&gt;* Energy Use: it takes almost ten times more energy to produce and transport livestock than vegetables. * Overgrazing: about 10 per cent of the arid West of the US has been turned into a desert by livestock. But some of that land couldn't be used for much else. "That's why my argument isn't for vegetarianism, but for people to reduce the consumption of animal products," maintains Durning.&lt;br /&gt;&lt;br /&gt;8. Cost&lt;br /&gt;&lt;br /&gt;Sure, you can spend $7.99 a pound on mesclun or other gourmet foods. But from squash to sweet potatoes, most plants are a downright bargain. And the lower price of plants shows up when you eat out. On Chinese, Indian, and most other restaurant menus, the vegetarian selections are usually cheaper than the meat, seafood and poultry.&lt;br /&gt;&lt;br /&gt;9.Animal welfare&lt;br /&gt;&lt;br /&gt;It's unpleasant to think about, but before we slaughter them, the animals we eat are often raised and transported under inhumane conditions.&lt;br /&gt;&lt;br /&gt;10. Taste&lt;br /&gt;&lt;br /&gt;The number-one reason for eating a plant-rich diet is that it tastes good. The five vegetables that Americans eat most are French fries, tomatoes (mostly as sauce or ketchup), onions, iceberg lettuce, and other potatoes. But if most Americans shrink the meat, seafood and poultry on their dinner plates, they - or many of their favourite restaurants - wouldn't know what to replace them with. You have to go to ethnic restaurants to get interesting plant-based dishes. It's no coincidence that ethnic restaurants know how to make vegetable dishes taste good. "Fortunately, there's a wealth of experience around the world because almost all traditional diets are plant-based," says Willet. Yet many Italian, Mexican and other ethnic restaurants have become so Americanised that their vegetables have been largely replaced by meat and cheese. And that's a shame. In Asian and Mediterranean cuisines, cooking fruits and vegetables is an art form. The Italians don't put tremendous amounts of meat and cheese on pizza, for example. I had a thin-crust pizza at a traditional restaurant recently with no cheese - just fresh basil, tomatoes and garlic.
